If you want to re – create these cute Minnie Mouse cupcakes this is how I did it…

I used a packet Utility cake mix any packet cake mix will be fine.

Or you can follow the cake recipe below:

2 cups self-raising flour, sifted

3/4 cup caster sugar

3/4 cup milk

125g butter, melted, cooled

2 eggs, beaten

1 teaspoon vanilla essence

Step 1

Preheat oven to 200C or 180C fan-force.

Combine flour and caster sugar in a bowl. Make a well in the centre.

Step 2

Add milk, butter, eggs and vanilla to flour mixture and mix.

Step 3

Spoon mixture into prepared patty pans. Bake for 12 to 15 minutes, or until a skewer inserted into the centre comes out clean.

Stand for 5 minutes before transferring to a wire rack to cool.

I used a White Chocolate Ganache. You can use a butter cream if you would prefer the recipe is below:

  • Pink Ready to Roll Fondant

Roll out a thin piece of pink ready to roll fondant and fold into the shape of a bow. With another thin piece of fondant fold over the middle of the bow. You could use a bow mould if you would prefer.

  • Black Ready to Roll Fondant
  • Small Round cutter

Roll out a thin piece of black ready to roll fondant. You could also use mini Oreos for the ears if you would prefer?!

  • White Ready to Roll Fondant

Roll out a thin piece of white ready to roll fondant. I just rolled small amounts of fondant with my fingers you could use the end of a straw to cut the dots out.
